Saudi Arabia | Chicken Kabsa

Saudi Arabia had several meals I was interested in but I was craving chicken and rice so I opted to make this Chicken Kabsa.


As a bonus, it uses some ingredients that I’d purchased for earlier International Meals (cardamom pods and dried lime) and it’s always nice when I have what I need on hand and I can use ingredients that I’ve accumulated along the way.


In addition to those ingredients, it uses cloves, cinnamon, bay leaves, ground coriander, salt, and pepper to season the chicken and rice. Heating up the spices before adding in some garlic and onion, made my kitchen smell kind of like Autumn and let me pretend it wasn’t 89 degrees outside for a couple of minutes. Adding in the onions and garlic, made the kitchen smell absolutely delicious.


The recipe really isn’t difficult. You basically put things in a deep skillet, in a certain order, and then bring it all to a boil, reduce heat, cover, and let the rice and chicken cook for a bit.


And it was so good!

It was the chicken and rice meal I needed.

It’s not spicy but the spices add a lot of flavor to the rice and chicken. It had a comfort food feel for me and I can see myself making this again in the future and I will happily eat the leftovers.
