Lithuania: Plovas keptas orkaitėje/Baked Rice Pilaf with Pork

It wasn't too terribly difficult to find something to eat from Lithuania and I have a few recipes set aside that I want to check out later but I was in the mood for pork and I always like rice so I went with this rice pilaf meal.


It is not terribly difficult to make though it does require turning the oven on so, if your oven heats up your entire house, it's probably better suited to cooler days. And you have to grate some carrots which is not as much fun as one would like it to be. (What is the best way to grate a carrot while also not grating one's fingers?)


I cut up the pork and coated it with the dried herbs & spices early in the day and let it sit (covered) in the fridge until dinner time. I don't know if letting it sit for a few hours helped but the pork turned out to be more flavorful than I was expecting!


The meal itself was quite good. I was a bit concerned that the carrots would become the dominant flavor but, thankfully, they did not. Everything worked well together and, I think, grating the carrots helped them blend in rather than stand out.


All in all, it wasn't a "knock your socks off" meal but it was tasty and filling. Would I make it again? I honestly don't know. I'm not opposed to eating it again, I just don't know if it is something I would crave in the future. Only time will tell.
