Iraq: Makhlama

Iraq had several things I was interested in but I found myself craving eggs* and had fresh homegrown tomatoes, cilantro, and parsley on hand so I made this breakfast for dinner last night and I really enjoyed it!


It's essentially a well-seasoned and spiced ground beef mixture with onions and tomatoes that you poach eggs in. The recipe author recommends eating it with warm pita bread but I ate it with some hashbrowns because that's what I had on hand and I really really REALLY did not want to go to the store. It would have been fantastic with warm pita bread or naan but it was great with the hashbrowns so, no regrets!


I would definitely eat this again! I


*Re eggs: I used to have "issues" with them but have discovered that there are a couple of brands of eggs that I can eat without problem. Happy Egg Co. and Vital Farms. I think it has something to do with what their chickens are fed vs. what other chickens are fed but I have no scientific evidence to back me up. All I know is, I like eggs and I'm glad to have found some that don't make me feel bad later.
