Chile: Palta Reina

They say this is an appetizer but it sounded like a good meal for summer, for me. And it was!
I cooked the chicken up in the morning before the house got too hot and then put it in the fridge until dinnertime. That was the extent of the cooking involved.
I did change up a couple of things but I don't think they'd get me kicked out of Chile.
The recipe calls for a vinaigrette over the lettuce but I opted to just squeeze some fresh lemon juice over it.
I also added some chopped green onions because I had them and they needed to be used up.
I really liked the lemon juice, it made it taste fresher and bright. The green onions added a different texture and a pop of oniony goodness.
I can definitely see myself eating this again, it was a great cool meal. Perfect for summer.
