Bahrain: Chicken Machboos

It took me awhile to get all of the ingredients for this one because I had to order a few of them online and, because I ordered them during the 2020 holiday season, there were shipping delays.

Anyway, I enjoyed this one. I don't think I've met a version of chicken and rice that I don't like and this recipe adds another exciting version to my repertoire. I did have some trouble finding the cardamom pods that you are directed to remove before serving, the lumi were much easier to locate!

Would I make it again? Yes, when I feel like having a more exotic chicken and rice meal and I've got time to spare.
