Antigua and Barbuda : Pork Chops with Bananas and Bacon

This is where I hit my first real challenge in finding something to make. A lot of the recipes I found online called for okra and sweet potatoes and, well, I dislike both of those things intensely. Also, because these are islands, they have access to fresher fish and a wider variety of seafood than I do here in a remote rural desert town. I didn't feel that what I could get my hands on locally would do their seafood recipes justice so it took me awhile to find something with good ingredients I could get locally and would not require me to make substitutions to make it palatable to me.


Anyway, the pork chops were delicious. The bananas wrapped in bacon were not for me. I like bananas but I'm particular about textures and the texture the bananas took on after being grilled was too mushy for me. Before the texture issue hit me, the flavor was okay, but not good enough to overcome the mushy texture.


Would I make it again? I'll probably make the pork chops again but I will not make the bacon-wrapped bananas again.
